Method :
Blanch
gizzards in boiling water. Boil 2 cups of water with spring onion,
ginger and Shaoxing wine for 5 minutes. Add gizzards and simmer for 20
minutes. Set aside. Rub coarse salt over gizzards and leave it for 2
hours. Preheat oven at 220C. Grill gizzards with salt for 10 minutes.
Slice to serve. Coarse salt is the best for this dish as fine salt to
dissolves too readily when marinated and grilled.
