Dry fry the
curry powder in the base of large saucepan for 1 minute, stirring
constantly. Add all the other ingredients. Cover saucepan and leave to
simmer gently for 20 minutes, or until vegetables are tender and the
water absorbed. Remove bay leaf. Serve hot, garnished with parsley. The
flavor
of curried food improves with standing so this dish can be prepared 24
hours in advance and stored, well covered, in the refrigerator. Reheat
before serving.
