4 spring onions (shallots), chopped
2 cloves garlic, crushed
2 tsp grated green ginger
1/3 cup soy sauce
3 tbsp dry sherry
4 chicken breasts, skinned
garnish :
chopped parsley
chives or spring onions (shallots)

Method :
Prepare the
marinade. In a bowl, combine all the ingredients, except the chicken.
Arrange the chicken breasts in a baking dish. Pour over the marinade.
Cover with plastic film and refrigerate for 2 hours, turning
occasionally. Bake them, uncovered, for 40 minutes, basting
occasionally, or cover and microwave on 'medium' for 20-25 minutes.
Remove chicken from baking dish and arrange on a serving platter. Brush
with pan juices. Sprinkle over with chopped parsley, chives or spring
onions (shallots).
Try a garnish
of three tablespoons of sesame seeds added before baking instead of the
garnish suggested in the recipe.
