Ingredients :
250g broad beans, frozen or fresh
85g smoked salmon, thinly sliced
12 cherry tomatoes
1 small white onions, thinly sliced
2 tbsp lemon juice
2 tsp olive oil
2 tsp capers, drained
2 tsp chopped fresh parsley
Method :
Cook broad beans until soft, but still retain their shape. Combine broad beans, smoked salmon, cherry tomatoes and white onion in bowl. Blend all the other ingredients in a screw top jar and pour over the salad. Chill and serve.
