250g lean minced beef
1 medium onion, diced
1 small clove garlic
2 sticks celery, diced
410g can tomatoes
1 tbsp tomato paste
3 cups water
1/2 tsp oregano, dried, or 1 tsp fresh
1/2 tsp paprika
1/2 tsp ground cumin
2 tsp white vinegar
440g can kidney beans, drained

Method :
Dry fry meat,
add onion and garlic and cook until juices evaporate and beef is well
browned. Add celery, tomatoes, tomato paste, water, oregano, paprika,
cumin and vinegar. Bring to boil. Add beans and reduce heat to low,
cover and simmer 30 minutes.
This hearty
soup only needs plenty of wholemeal bread to make it into a meal in one.
