Method :
To make the
parsley crust, melt the butter in a small frying pan over medium heat.
Add the spring onion and garlic and stir until softened. Add the
breadcrumbs and parsley and stir until combined. Cool. Preheat the oven
to 180C (350F/ Gas 4). Place the turkey in a large, deep baking dish and
pat the turkey dry with paper towels. Brush with egg. Press the parsley
crust firmly onto the turkey. Bake for 45 minutes, or until the crust is
lightly golden. Serve sliced with your favorite accompaniment.
Note: Turkey
can be bought as a boneless breast with the skin on, which makes it very
easy to carve. It is sometimes called a turkey breast supreme and it is
available from chicken shops and some supermarkets. The parsley crust
can be made up to a day in advance.
