cooked long-grain brown rice
chopped dried apricots
unsalted cashews
chopped fresh parsley
chopped fresh mint
lemon juice
Melt the butter in a frying pan and cook the onion until golden. Cool, then mix with the remaining ingredients and season to taste. You will need to cook 1 cup brown rice for this recipe.
