Method :
Mince the pork
and beef. Add seasoning A (without water), orange peel shreds and spring
onion. Mix well and stir in one direction. Add water gradually and
meanwhile stir to a very sticky and elastic paste. Finally, add
cornstarch, salad oil, and sesame oil, and chopped Chinese parsley. Put
into refrigerator for 20 minutes.
Boil half pot
of water and add 1 tsp of salt. Dip the watercress in the water to scald,
drain and soak in cold water. Place at the bottom of the steamer, shape
beef paste to pellets and arrange on the watercress to steam for 10
minutes.
