Stir Fried Scallops, Shrimps and Honey Peas Recipes

Ingredients : |
225g frozen scallops
450g medium sized shrimps
113g honey peas
2 cloves garlic (sliced)
ginger slices
carrot slices
2 tbsp wine
Marinade for scallops
1/6 tsp salt
1/2 tbsp caltrop starch
pinch of pepper
1/2 tbsp egg white
Marinade for Shrimps
1/6 tsp salt
1 tsp caltrop starch
dash of sesame oil
pinch of pepper
1/2 tsp egg white
Sauce
1/4 tsp salt
1/5 tsp granulated sugar
1/2 tsp caltrop starch
dash of sesame oil
2 tbsp water |
Method :

Defrost
scallops. Absorb excess water. Add marinate and marinate for 10
minutes.

Shell
shrimps. Wash and wipe dry. Cut at the back of shrimps and remove
veins. Add marinade and marinate for 15 minutes. Deep fry in warm
oil.

Bring 3
cups of water to the boil. Add 1 tbsp of vinegar. Put in scallops.
Remove and drain. Then deep fry in warm oil.

Remove
the tough strings from honey peas. Wash. Then scald in boiling water
with oil and salt.

Heat 2
tbsp of oil. Sauté ginger slices and garlic slices until the
ingredients become fragrant. Discard. Add shrimps and scallops.
sizzle wine. Then add honey peas, carrot slices and sauce. Stir well
and dish up.
