Method :
- Scald the shark's fin with ginger,
spring onion and Shaoxing wine.
- Set aside.
- Skin, rinse and scald the chicken.
- Skin, scald and dice salted pork
trotter.
- Arrange chicken, salted pork
trotter, shark's fin and ginger slices into a stewing pot.
- Put in 4 cups of boiling water.
- Stew over high heat for 1/2 hour.
- Reduce to low heat and cook for 3
hours.
- Discard ginger slices.
- Season with salt.
- Serve with Chinese parsley and red
vinegar.
Pork trotters can be bought in grocery
stores. To avoid shark's fins sticking on the bottom of the pot, put a
piece of bamboo mat at the bottom when cooking.
