Method :

Gut sea
cucumber. Wash. Scald in hot boiling water with ginger and spring
onion. Rinse with water.

Scald
shin of pork and rinse with water. Wash dried yam. Peel carrot and
cut into large pieces. Soak dried tangerine peel until it becomes
tender. Remove pith.

Bring 8
cups or suitable amount of water with dried tangerine peel to the
boil. Put in all ingredients and cook for 10 minutes. Then turn to
low heat and cook for 2 hours. Remove sea cucumber when it becomes
tender. Season with pinch of salt.
