Method :
Wash pork
belly. Wipe dry and marinate overnight. Wash dried shrimps. Stir
well with a little oil. Soak
green beans for 3 hours. Drain well. Mix well with 1 tsp of oil. Soak
dumpling leaves for 30 minutes. Simmer in boiling water for a while.
Wash and drain well. Wash wrapping straw. Wash
glutinous rice and drain. Add seasoning and mix well.
Place one
piece of dumpling leaf on top of another and cross 2 end to form a
hollow. Put in a layer of glutinous rice and some dried shrimps.
Then a layer of green beans, a piece of pork belly and one salted
egg yolk. Place another layer of green beans and glutinous rice.
Fold dumpling leaves inward. Hold the center of dumpling tightly.
Trim the hard tissue off leaf. Fold the leaves on the 2 sides
inwards. Form into a rectangular shape. Wrap the two ends with straw
and tie knots to secure. Cut away excess straw. Transfer to a big
pot. Add boiling water (water level should be sufficient to cover
dumplings). Simmer for 2 1/2 hours. Leave covered for 3 hours or
over night. Pour boiled oil, light soy sauce or granulated sugar on
top when serving.
