Method :

Drain Chinese mushrooms and squeeze
out excess water.

Discard stems and thinly slice
caps.

Slice oyster and button mushrooms.

Heat oil in a wok and stir fry
mushrooms for 2 minutes.

Add soy sauce, celery, garlic and
cinnamon stick and stir fry for 2-3 minutes or until just cooked.

Transfer to a shallow dish and
leave to cool.

To make marinade, mix together soy
sauce, dry sherry and black pepper and pour over cooled mushroom
mixture.

Cover and chill for 1 hour.

Discard cinnamon stick, garnish and
serve.
