Lemon and Honey Chicken Recipes

boneless chicken breasts, each weighing
115 g
honey
light soy sauce
clove garlic, finely chopped
sunflower oil
chopped fresh chives
freshly ground pepper
thin strips lemon zest, to garnish
grated zest and juice 2 lemons |
Method :

Remove skin and fat from chicken
breasts.

Using a sharp knife, score chicken
breasts in a cross on both sides, taking care not to slice all the
way through.

Place in a shallow dish.

Mix together honey, soy sauce,
lemon zest and juice, garlic and pepper.

Pour over chicken, cover and chill
1 hour.

Heat oil in wok.

Drain chicken, reserving marinade,
and cook for 2-3 minutes on each side, until lightly golden.

Add marinade and simmer for 5
minutes, turning frequently, until chicken is cooked through and
sauce syrupy.

Stir in chives, garnish with lemon
zest and serve on a bed of noodles.
