lean pork chops, each weighing about 115 g
sesame oil
dry sherry
light soy sauce
sugar
corn flour mixed with 2 teaspoons water
grated zest and juice 1 lime, 1 small
lemon and 1 small orange

Method :

Trim fat from chops and score in a
crisscross pattern.

Place in a shallow dish, sprinkle
with citrus zests and top with juices.

Cover and chill for 30 minutes.

Drain chops well, reserving juices.

Preheat grill.

Place chops on grill rack and brush
lightly with sesame oil.

Grill for 3-4 minutes on each side
or until cooked through.

Drain on absorbent kitchen paper
and keep warm.

Place reserved juices in a small
saucepan with sherry, soy sauce, sugar, pepper and corn flour
mixture.

Bring to the boil, stirring until
thickened.

Slice pork chops and arrange on
serving plates with lime, lemon and orange slices.

Top with sauce and garnish with
strips of citrus zest to serve.
