Method :
- Wash Job's tears.
- Soak in water for 1/2 hour.
- Drain the liquid.
- Wash and peel water chestnuts.
- Dice.
- Put tapioca cubes into boiling
water and cook until transparent.
- Rinse.
- Bring 8 cups of water to the boil.
- Add Job's tears and cook for 1/2
hours.
- Add water chestnuts, gingkoes and
red dates.
- Cook for 15 more minutes.
- Add rock sugar and cook until it
melts.
- Add tapioca cubes and bring to the
boil again.
- Serve.
Except tapioca cubes and Job's tears,
feel free to improvise with other ingredients. For instance, leftover
candied lotus seed and lotus root from the candy tray work just fine.
