Four Gem Sweet Soup Recipes

Ingredients :

150g tapioca cubes

10 water chestnuts

1 pack vacuum packed gingkoes

75g Job's tears

12 red dates, cored

rock sugar

Method :
  1. Wash Job's tears.
  2. Soak in water for 1/2 hour.
  3. Drain the liquid.
  4. Wash and peel water chestnuts.
  5. Dice.
  6. Put tapioca cubes into boiling water and cook until transparent.
  7. Rinse.
  8. Bring 8 cups of water to the boil.
  9. Add Job's tears and cook for 1/2 hours.
  10. Add water chestnuts, gingkoes and red dates.
  11. Cook for 15 more minutes.
  12. Add rock sugar and cook until it melts.
  13. Add tapioca cubes and bring to the boil again.
  14. Serve.

Except tapioca cubes and Job's tears, feel free to improvise with other ingredients. For instance, leftover candied lotus seed and lotus root from the candy tray work just fine.
