Method :
- Boil the dried fish maws in water.
- Switch off the heat and let them
soak for 3 hours.
- Wash and cut into pieces.
- Soak tangerine peel in water until
soft.
- Scrape off the pith.
- Wash lotus seeds, lily bulbs and
candied dates.
- Wash shin of pork.
- Cut into large pieces.
- Scald.
- Skin, wash and slice carrot.
- Bring 12 cups of water to the
boil.
- Add all ingredients and bring to
the boil again.
- Cook over high heat for 10
minutes.
- Turn to medium low heat and cook
for 2 hours.
- Turn to high heat again at last
and cook for another 10 minutes.
- Season with salt.
- Serve.
In case you use fish maws with thinner
walls, just scald and rinse them before cooking.
