Method :
Mix chicken
wings with marinade and leave them for 15 minutes. Rinse fermented black
beans. Add 1/2 tsp of sugar and 1 tbsp of oil. Steam for 5 minutes. Let
it cool and then chop finely. Chop garlic. Sprinkle 1 tbsp of cornflour
on the chicken wings. Deep fry in hot oil until golden. Drain and set
aside. Heat 6 tbsp of oil in wok. Fry garlic until golden. Drain excess
oil. Heat 1 tbsp of oil in wok. Sautee fermented black beans until
fragrant. Stir in garlic and seasoning. Put chicken wings back in and
toss well.
If you like
hot food, add some dried red chili to the fermented black bean mixture.
It will give you an unexpected good taste.
