Chinese Fruit Soup Recipes

rice wine or dry sherry juice and zest 2

granulated sugar
lemon grass
whole cloves
stick cinnamon
vanilla pod, split
teaspoon coriander seeds, lightly crushed
piece fresh root ginger, peeled and thinly
sliced
raisins
prepared sweet fruits, e.g. mango,
strawberries, lychees, star fruit, kiwi fruit |
Method :

In a saucepan, place rice wine or dry
sherry, lime juice and zest, water, sugar, lemon grass, cloves,
cinnamon, vanilla, nutmeg, coriander seeds and ginger.

Heat gently, stirring until sugar
dissolves, then bring to the boil.

Reduce heat and simmer for 5 minutes.

Leave to cool, then strain into a
bowl.

Add raisins then chill.
Arrange a selection of prepared fruit in 4
individual serving dishes and spoon over syrup.
