of hot pot soup. The following are some recipes for Chinese Autumn
and Winter soup:
Pear and Apple Soup – carrot, apple, pears, sugar cane, water
chestnuts
Spareribs Medicinal Soup in Singaporean Style – spareribs,
bei qi, huai shan
Papaya and White Fungus Soup – papaya, candied dates, white
fungus, sweet and bitter almonds
Chicken Congee – chicken, rice, dried scallop, ginger
Chinese Parsley and Preserved Duck Egg Soup – Chinese
parsley, grass carp, preserved egg
Tomato, Potato and Beancurd Soup – Chinese celery, potato,
tomato, beancurd
Cook the above ingredients until the flavor is strong before
transferring them to the hot pot. The food blanched will be more
delicious.
Eating fruit and honey are the best way to expel the heat and
dryness from hot pot food.
