Method :
Rub the spare ribs all over with a
little salt, sprinkle generously with pepper and place in a shallow
ovenproof dish large enough to hold all the ribs in a single layer. Make the marinade by mixing all
the ingredients in a bowl or jug. Stir thoroughly, then pour the
marinade over the ribs, cover and leave in a cool place for 4 hours,
turning the ribs halfway through. Drain the marinade into a jug and
put the spare ribs into a hinged wire grill for ease of turning. Cook under a preheated grill or on
the greased grill of a barbecue for 10 minutes, then turn and cook
for 10 minutes more. Baste with the marinade, turn the
ribs again and cook for 15 minutes, then baste and turn again,
cooking for a final 10 minutes.
