Place prawns, chili, spring
onions, lemon zest, corn flour, egg white and black pepper in a
blender or food processor and process to form a firm dough like
mixture.
Divide prawn mixture into 12
portions and form each portion into a smooth ball, flouring hands
with extra corn flour if necessary, to prevent sticking.
Bring a wok or large saucepan of
water to the boil, arrange prawn balls on a layer of greaseproof
paper in a steamer and place over water.
Cover and steam 5 minutes or until
cooked through.
