Method :
- Wash chicken and drain off the
water.
- Wash galangal and slice.
- Tear the outer skin off shallot
and pound lightly.
- Bring premium light soy sauce and
6 cups of water to the boil.
- Put in galangal, shallots, star
aniseeds, brown sugar and salt.
- Cook for 15 minutes.
- Place in chicken and bring to the
boil for a while.
- Reduce to low heat and soak for 5
minutes.
- Turn off the stove and cover for
15 minutes.
- Add rose wine and bring to the
boil again.
- Turn off the stove and cover for
10 minutes.
- Remove the chicken and leave to
cool.
- Chop up and transfer to a plate.
- Pour the liquid from cooking
chicken.
- Serve.
Do not soak and cook chicken over high
heat so that the chicken will be very smooth and tasty.
