Method :
Wash
chicken and hang up for 30 minutes. Bring
water (water level should be sufficient to cover chicken) to the
boil. Put chicken into water and then take out. Repeat 3 times.
Cover and boil. Lower heat immediately (there should be steam coming
up). Soak for 15 to 20 minutes. Chop and dish up. Bring
sauce (1) to the boil (no need to remove from heat). Fill ladle with
sauce. Pour onto chicken from head to tail until chicken becomes
hot. Blanch lettuce with oil and salt water. Arrange on side of
plate. Heat wok.
Sauté ginger with a little oil until fragrant. Sizzle wine. Stir in
sauce (2). Bring to the boil. Pour onto chicken and lettuce. Serve.
