Bean Curd Stuffed with Lean Pork and Shrimps Recipes

Ingredients : |
75g lean pork
150g shrimps, shelled
4 bean curd
green peas
red dates, cooked
2 slices of ginger
1 tsp wine
Seasoning
1/4 tsp salt
1/6 tsp granulated sugar
1/2 tsp caltrop starch
1 tsp egg white
sesame oil
pepper
Sauce
2 tsp oil
1/3 tsp salt
1/6 tsp granulated sugar
3/4 tsp caltrop starch
3 tbsp stock |
Method :

Wash,
finely dice and puree lean pork. Scald, rinse and drip dry green
peas.

Devein
shrimps, rub with salt, rinse and wipe dry. Pat shrimps into puree,
combine with seasoning and lean pork and blend in one direction to
form filling.

Rinse and
drip dry bean curd. Cut each piece into 3 thick slices, dish up and
dab with caltrop starch. Stuff bean curd with filling and green
peas. Steam over boiling water for 12 minutes and until done, drain
the sauce and arrange red dates around.

Heat oil,
stir fry ginger until fragrant and sizzle wine. Add sauce, bring to
the boil and pour over bean curd.
