Method :

Cook
abalone with can in hot boiling water for 6 hours. Remove and leave
to cool. Open the can and slice the abalone.

Wash
mustard green. Add 1/6 tsp lye into hot boiling water. Blanch
mustard green. Then remove and rinse with water. Simmer with salt,
sugar and stock until mustard green becomes tender. Arrange on a
plate.

Heat 2
tbsp of oil. Sauté ginger slices. Sizzle wine. Then add abalone
sauce and stir well. Discard ginger slices. Stir in sauce. Then add
abalone slices and stir well. Put abalone on the plate.
