Almond Paste Recipes

Ingredients :

225g icing sugar

225g caster sugar

450g ground almonds

1 tsp lemon juice

2-3 drops almond essence

1 egg

Method :

Put the icing sugar through a sieve into a bowl. Add the caster sugar and ground almonds. Mix well. Add the lemon juice and almond essence. In another bowl, beat the egg with a fork. Slowly add the beaten egg to the other ingredients. Use a wooden spoon and mix well. The mixture should be very thick. Roll the mixture out until it is about 3/4cm thick. Cut a circle of almond paste the same size as the Christmas cake. Put this on top of the cake. You can also put almond paste round the sides of the cake. If you like. Cover the cake with aluminum foil again and keep it in an airtight tin until a week before Christmas. Then cover the cake with Royal Icing.
